Waffle House, Lubbock Texas

Dear Waffle House, Lubbock Texas needs you.

Do not get me wrong, IHOP is great. Breakfast House is a staple. Pancake House is bliss. And Red Zone Cafe is perfect.

But Waffle House is an institution that’s absence has left a little waffle sized hole in the heart of Lubbock.

First of all, we clearly have the population to support one.

I mean, there is a Waffle House in Greenville, Alabama for heaven’s sake.

If the 8,000 people of Greenville can get one, why not the waffle starved masses of West Texas?

But the torture is that, on top of waking up every day with a waffle shortage, we can still smell it.

See, every morning Waffle House has breakfast cooking and being served in Amarillo, Albuquerque, and DFW. 

I mean, Lubbock is nearly surrounded by Waffle Houses.

To complete the circle, Midland/Odessa just needs one.

Please stop the madness.

And at the end of it, truth be told, I just want the chance to take my kids there on the weekends.

It would be a pretty cool Christmas Eve tradition too.
